Highlands Ranch's 2026 Openings Are Built Around the Morning

Highlands Ranch has picked up a breakfast chain, a second Black Rock Coffee Bar, a cookie shop and a reformer Pilates studio this year. All four start their day early. In August the town lost Rock Bottom on Park Central Drive, which was its most visible sit-down dinner-and-beer room. As of late summer that space was still empty and no new tenant had been named. Taken together, 2026 has added plenty to the hours before mid-afternoon and almost nothing to the hours after dark.

Here is the year's list, in the order each business opens its doors on a normal day:

  • 5 a.m. Black Rock Coffee Bar, 9401 S University Blvd, open daily until 8 p.m.
  • 7 a.m. Egg Harbor Cafe, 9579 S University Blvd, serving breakfast, brunch and lunch, then closing in the afternoon
  • 9 a.m. Joy Batch Cookies & Coffee, 9315 Dorchester St, Unit 109, opening Friday, Oct. 9, with grand-opening hours of 9 a.m. to 6 p.m.
  • By order Graze Craze, 2670 E County Line Rd, which builds charcuterie spreads for events rather than running a dining room
  • Class schedule BODYBAR Pilates, 9265 S Broadway, Suite 100, opening to the public Monday, Oct. 12

One Stretch of University Boulevard Turned Over in a Single Year

The clearest example of the shift is the 9400 to 9500 blocks of South University Boulevard. In about nine months:

  1. Egg Harbor Cafe opened at 9579 S University Blvd in March. It was the chain's first Colorado location.
  2. Learning Express Toys, at the same 9579 address, closed for good.
  3. Toastique closed at 9567 S University Blvd, Suite C3. The toast and juice bar had been on reduced hours through mid-2026, according to DougCo Social's running list of new and closed Douglas County businesses. Its landlord now lists the 1,400-square-foot unit as potentially available.
  4. Black Rock Coffee Bar opened at 9401 S University Blvd on Sept. 14.

So a breakfast-and-juice spot closed on the same stretch where a bigger breakfast restaurant and a coffee bar opened. The turnover shows where operators are putting their money. Even with plenty of demand for morning food, a smaller concept can lose its spot when a better-known chain arrives a few doors away.

Egg Harbor Brought a Midwestern Breakfast Chain to Colorado for the First Time

Egg Harbor Cafe started in Hinsdale, Illinois, in 1985. The family that owns it is now in its third generation, and it runs 27 locations across Illinois, Wisconsin and Georgia. Out of all the Colorado sites it could have picked first, it chose Highlands Ranch. A second Colorado location is planned for Belleview Station at 7222 E Layton Ave, near the Denver Tech Center.

The menu is skillets, benedicts and French toast, served from 7 a.m. into the early afternoon. The opening slipped a little. In October 2025 the Denver Post's advance story expected the Colorado locations to open in February. The Highlands Ranch restaurant opened in March 2026.

Black Rock Now Has Stores on University and on Broadway

The University Boulevard store is Black Rock Coffee Bar's second in Highlands Ranch. The first is at 9215 S Broadway. The company calls the new store its 22nd in Colorado and its sixth in Douglas County, out of more than 200 locations in seven states. "Each new store gives us the opportunity to become part of a new community, and we're excited to continue growing in Colorado," CEO Mark Davis said in the company's announcement.

The new store is open 5 a.m. to 8 p.m., seven days a week. That makes it the earliest opener on this list and, outside the Pilates class schedule, the only new arrival listed with hours into the evening. Even so, it is a coffee bar. You order and leave. It doesn't replace a dinner reservation.

Town Center Gets a Standalone Cookie Shop on Friday

Joy Batch Cookies & Coffee holds its grand opening on Friday, Oct. 9, from 9 a.m. to 6 p.m. at 9315 Dorchester St, Unit 109, in Highlands Ranch Town Center. The shop used to be Quinnie's Cookies. Owner Sarah Carlson started it as a home bakery in 2023, and this is its first standalone storefront. The plan is cookies, coffee and curated gifts.

In her announcement, Carlson thanked the people who helped the business get this far:

"We truly couldn't have opened our doors without the overwhelming encouragement, excitement and support from all of you."

A September hiring post offered $16 to $20 an hour plus tips for bakers, baristas and front-counter staff, DougCo Social reported. The Castle Pines Chamber of Commerce is holding a ribbon cutting at the shop on Tuesday, Oct. 20, from 4 to 5 p.m. Regular hours and a full menu hadn't been published as of the Oct. 5 update.

The Non-Restaurant Openings Fill the Day Too

Two of this year's openings aren't restaurants, and both fill daytime and event-calendar hours.

Graze Craze opened in May at 2670 E County Line Rd, and the Herald's story about the opening is dated May 28, 2026. Franchise owner Sara Clay lives in Highlands Ranch, taught in the Douglas County School District for several years, and works in law enforcement, the Highlands Ranch Herald reported. The shop sells grazing boards for fundraisers, graduations, corporate events and backyard get-togethers. Clay told the Herald, "We're excited about creating something beautiful that people can enjoy as gifts, for meetings, for parties or for any other celebration."

BODYBAR Pilates held its grand-opening party on Wednesday, Oct. 7, at 9265 S Broadway, Suite 100. The party included a ribbon cutting and more than 15 local businesses. Classes open to the public on Monday, Oct. 12. The studio is a few doors down Broadway from Black Rock's first Highlands Ranch store at 9215.

The Evening Room That Closed Hasn't Been Replaced

Westword's weekly roundup on Aug. 15, 2026, listed Rock Bottom Restaurant & Brewery at 1505 Park Central Dr among two suburban closures. The other was the Centennial location at 9627 E. County Line Road. Loveland is now the chain's only Colorado location. BusinessDen reported on Aug. 17 that both had closed in recent weeks. It also noted that the Highlands Ranch brewpub opened in the late 2010s. The Denver Post ran that report on Aug. 18.

DougCo Social says the Highlands Ranch restaurant closed during the week of Aug. 15. In its Aug. 25 report the space was empty and no replacement tenant had been named. The research for this post turned up no later announcement.

The nearest new evening restaurant on the public calendar is in Lone Tree. Thirsty Lion Gastropub plans to open there in December 2026 at 8335 Park Meadows Center Dr. It describes itself as a scratch kitchen with craft cocktails and draft beer, and it will be the chain's second Colorado location after Union Station. One more Highlands Ranch store is on the way, a Dollar Tree going into a 7,400-square-foot suite at The Plaza at Highlands Ranch, 1970 E. County Line Rd. No opening date has been announced.

The 2026 additions in Highlands Ranch have gone to the morning. A 5 a.m. coffee bar, a 7 a.m. breakfast restaurant and a cookie counter opening at 9 a.m. on Friday are all new this year. Park Central Drive's dinner-and-beer space has been empty since mid-August.
